As known, Summer is almost here and with the rising temperature, the chilled scoop of ice creams wouldn’t work. But, how about ditching those chilled ones and try something refreshing and light? Sorbets are healthier alternatives and they are a burst of flavors.

Into a saucepan, add 100ml skimmed milk, 200ml low-fat cream, 40 grams of sugar and boil the mixture on a low flame for 35 minutes. Now, add some fresh turmeric root, turmeric leaf to the mixture. Mix with orange rind, season with some salt and allow the mixture to cool down completely. Then, grind the mixture and freeze it for 24 hours. Make a roundel of the sorbet and serve with some salt and orange rind.
Pink Rose Sorbet
Mix 250ml of water, 100gms of sugar, 10gms stabilizer, 40 gms glucose and 50ml of rose syrup. Put it in the freezer for a couple of hours and then, decorate with some rose petals.
Mango and Passion Fruit Sorbet
Combine, 1 cup passion fruit pulp and 1 cup of passion fruit pulp mangoes into the freezer-safe container, Freeze it for an hour. Beat two egg whites until it becomes peaks. Fold the egg white mixture with the fruit one. Add some hibiscus flower to the mixture. Freeze inside the freezer for another hour. Mix it and then again keep in the freezer until you get the desired consistency.
Lemon and Wine Sorbet
In a saucepan, add one and a half cup water and one cup of sugar and stir it until the sugar dissolves. Remove from the heat and cool down. Add one cup lemon juice, 1 tbsp lemon zest, and 1 cup white wine. Pour the mixture into an ice cream maker and churn for 45 minutes. When the sorbet turns to ice crystals, stir it and freeze it until it reached its desired consistency.
Puree strawberry and then strain it. Mix it with 50gms of sugar and 15gms of lemon juice. Give a quick turn to the mixture in a blender. Freeze the mixture and every four hours, churn the mixture to prevent the formation of ice. Doing so for 4 to 5 times, you’ll attend the consistency of Sorbet.
Add one cup of water and five cups raspberries into a food processor. Pulse it until for smooth constituency. Strain the raspberries mixture, and add one and a half cups of sugar, 1 tsp vanilla extract and 1-2 tbsps of fresh lemon juice and allowed it to bowl. Whisk till sugar dissolves and freeze it for more than 4 hours for the firm constituency.
